Prep Turkey: Remove giblets and pat dry with paper towels. Place on roaster oven rack.
Butter Under Skin: Gently separate skin from breast and slide butter pats underneath.
3.Season:Mix salt, pepper and thyme. Rub all over turkey, including cavity.
Stuff Aromatics: Loosely fill cavity with onion, apple, celery and lemon.
5Optional Browning: Mix 2 tbsp melted butter with soy sauce and brush over skin.
6.Roast: Pour broth in pan. Cook at 400°F (200°C) for 1 hour, then reduce to 350°F (175°C).
Check Temp: Roast until thigh reaches 165°F (74°C) (about 10-12 min/lb).
Crisp Skin (Optional): Transfer to regular oven at 400°F for 10-15 minutes.
Rest: Tent with foil and let sit 30 minutes before carving.
